1 Minute Chocolate Cake in a Cup

Ingredients:

3 tbsp plain gluten free flour*

3 tbsp sugar

1 tbsp cocoa or raw cacao

¼ tsp baking powder

Pinch of salt

3 tbsp preferred milk

1 tbsp coconut oil or softened butter

½ tsp vanilla extract

To serve

1 tsp cocoa powder

Ice cream

Method:

Sift dry ingredients together in a bowl. Add remaining ingredients and stir well to combine.

Pour mixture into a coffee cup and microwave for 50 - 70 seconds. Less microwave time results in a more molten texture.

Dust with cocoa and serve with ice cream or dollop cream.

*This recipe was made with Bob’s Red Mill 1 to 1 plain gluten free flour. Different brands deliver different results.
